Today's Blessing: Making it Homemade!
Scott is a huge fan (and I mean HUGE!) of peanut butter! If we're out of peanut butter then we must be destitute because to Scott it is a staple of life! Every day his lunch includes an apple with peanut butter. If he eats pancakes...they have peanut butter on them. When he cooks an egg and toast for breakfast...you guessed it...he puts peanut butter on the toast. Sometimes I've even caught him eating it straight from the spoon! Like I said back on April 20, 2013, if Heckedy Peg turned us into food Scott would most definitely become peanut butter!!
Several months ago, Scott discovered he could make his own peanut butter. His mom owns a "Champion Juicer" (which must be over 50 years old!) and amazingly it grinds up peanuts to a perfect consistency of peanut butter. Then he "pounds" up several more cups of peanuts (he puts them in a Ziploc bag and pounds them with a meat mallet - it eliminates the too fine chopping that often happens when you chop peanuts in a chopper) and adds them to the "butter"...he now has Chunky Peanut Butter. And unlike store bought peanut butter, it has no added sugar or oil - it's all natural. We did discover we preferred mixing dry roasted peanuts with dry roasted salted peanuts to help liven up the taste a bit. Without the little added salt in the salted peanuts, the peanut butter was quite bland.
My daughter Stephanie and her husband Clint have turned over a new leaf and are becoming more healthy in their eating choices. So when Stephanie asked her dad if he would make them some peanut butter he was more than happy to do so! He loves helping out his kids, especially when it's something he loves...like making his own peanut butter!
Here's the harvest from 4 lbs. of peanuts. The cost saves you about 30% of what you'd pay in the store for already made peanut butter but it's so much better for you!

And I'm loving it. I think this peanut butter tastes better with apples than storebought peanut butter.
