Day 360 (Double Not So Empty) - Pickled Beets

I'm the only one in my family who likes beets.  Actually, I don't like plain beets, I like pickled beets...those are beets that have been doctored up.  Mmm...they taste so good on salad!!

Today I harvested my two "big" rows of beets.  Some of them were amazingly big, others not so big, but I got enough to bottle 12 cute little half pints of pickled beets.  A couple of years ago my harvest yielded three pints, but a pint jar was just too much for me to eat.  They would go bad before I could finish the bottle.  Hopefully a half-pint will be just the right size! :)
